This oven-roasted garlic herb cabbage steak recipe is a simple, no-fuss, and delicious side dish. It’s the perfect thing to simply throw in the oven and forget about as you prepare the rest of your meal.

Once you have the basic recipe down, this is a great dish to experiment with! You can make a smoky version by adding paprika and chili powder, or you can throw some cheese on at the end to melt. Cabbage steaks are a staple vegetable dish that have endless possibilities for customization. As long as you’re getting those extra veggies on your plate.
Cabbage is one of those ingredients that is so helpful to have on hand. You can throw it into a stir-fry, soup, or simply sauté it in a skillet.
These cabbage steaks are a great simple way to cook up some cabbage in a hurry. They are something I made all the time in high school for my family because it is a quick, hands-off recipe that I could toss in the oven and pull it out ready to eat in half an hour. High in vitamin C, it’s a great addition to any meal and sure to please.
Tips
- The edge pieces of the cabbage will likely char during baking. This is necessary to get the middle of the cabbage steak tender. You can pinch off the charred pieces after baking, but I actually think they taste delicious and leave them on to munch on.
- You can experiment with other toppings for the cabbage. Try rosemary, Italian seasoning, or even an infused olive oil. Our favorite was adding mozzarella and red pepper flakes just a few minutes before the end of the baking time.
- If you don’t have a basting brush, you can use your fingers or a spatula to spread the oil over the cabbages. Just be sure to spread it well. You don’t want the cabbage to dry out during baking.
- It is not necessary to cover both sides of the cabbage steaks with oil and spices, but it is a good option if you feel the steaks are too bland.

Simple Cabbage Steak Recipe Ingredients
Cabbage head
Olive oil – Best for the flavor, but feel free to substitute with another oil if desired.
Pink Himalayan salt – or any other salt
Freshly ground black pepper
Garlic – fresh, minced
Thyme (optional) – Dried or fresh

Directions
Prepping
Preheat the oven to 350° F.
Carefully cut the cabbage head into ½-¾ inch slices. Keep in mind that the thicker the slices, the longer the cooking time and the more charred the outer edges will become in the process.

Lay the cabbage steaks flat onto a baking sheet. Drizzle the olive oil generously over each slice and spread it all over both sides of the cabbage steaks with a basting brush or your fingers, making sure to cover all parts of the cabbage steaks.
Sprinkle your choice of salt, fresh ground pepper, and minced garlic (and thyme if using) over the top of the cabbage. We only ever season one side of each steak, but feel free to do both if you feel it needs it.

Baking
Once the cabbage is prepared, simply slide the baking sheet into the oven and bake for 30 minutes, or until the center of the cabbages are tender. If you are short on time, you can increase the temperature and bake for less time, but just know the cabbages will char more the higher you set the oven to. I wouldn’t go above 400° F.

- 1 head cabbage
- 2 Tbsp olive oil
- salt to taste
- freshly ground black pepper to taste
- 2 cloves garlic minced
- 1 tsp thyme optional
Instructions
- Preheat the oven to 350° F
- Cut the cabbage into ½ inch slices
- Arrange the cabbage slices flat on a baking sheet and drizzle both sides generously with olive oil. Use a basting brush to spread the oil out and then sprinkle salt and pepper on each side.
- Top the cabbage with freshly minced garlic and thyme.
- Bake for 30 minutes or until the edges are crispy and the center is tender.
Notes
- While regular iodized salt can be used, we prefer using himalayan salt to get a better flavor.
