These hot honey roasted carrots are a sweet and savory side dish with a slight kick. These are always an absolute hit when we make them and are sure to become a staple side in your kitchen!

Anytime we cook these carrots for someone new, they immediately ask us how we made them. One friend even donned on me the honor of being one of only two people he knew that could make vegetables taste good after trying them.
And yet, this was a recipe I threw together one evening in high school when my family needed to use up some old carrots. As my husband always quotes, “Necessity is the mother of invention.” This is why we need to experiment in our kitchens. Sometimes a delicious and simple dish is just one creative evening away.
What to Pair With Hot Honey Roasted Carrots

Without further ado, here is how you make these delicious carrots.
Ingredients

Carrots – cut into small batons (carrot sticks) – In this post, we used rainbow carrots, but regular orange carrots are just as great.
Extra Virgin Olive Oil
Sea Salt
Black Pepper
Hot Honey – we use Savannah Bee hot honey from Costco which uses habanero and scotch bonnet peppers, but feel free to use whatever hot honey you like (or make your own!). You can also substitute for regular honey if you don’t want it to be spicy.

How to Make Hot Honey Roasted Carrots
Prepping
STEP 1: Preheat the oven to 360° F.
STEP 2: Slice the ends off the carrots, peel them and cut them into batons. Place them in a single layer onto a baking sheet.
STEP 3: Drizzle olive oil over them and add salt and pepper to your taste.
STEP 4: Mix the carrots around right on the baking sheet to coat them in the oil. Once they are coated, make sure they are again sitting in a single layer on the pan.
STEP 5: Finally, drizzle hot honey and sprinkle cinnamon over the carrots.


Baking
STEP 6: Bake at 360° F for about 20 minutes or until the carrots are cooked through.
Serve hot and enjoy!

Tips
- Keep in mind that the carrots will get smaller while roasting, so we have to make more than we think we will need. For a family of more than four, you might consider making two sheets of carrots.
- You can try this dish with rainbow carrots and even parsnips too!
- If you don’t like spice, substitute the hot honey for regular honey. It is just as delicious and was actually the original way I made the recipe.
- Try to not get too much honey onto the pan itself. If enough pools without the oil mixed in, it will caramelize to the baking sheet and be harder to clean off.
How to Store
Store carrots in an airtight container in the fridge for up to 5-6 days.

But would you please share ;your method of making hot honey out of regular honey? I tried just adding dried homegrown peppers I(large flakes) and letting it sit for a couple of weeks. This is good, but I don’t taste much of the heat unless I actually get a flake of pepper. Do you know how to get the spicy to permeate throughout the honey?
