Quick Herb Seasoning Blend: Scarborough 6 Spice

This is absolutely our favorite herb seasoning out there. It pairs fantastically with steak fingers, potatoes, lamb, roast, you name it. If you are looking for something savory and a little different, this herb blend is the way to go.

With Spring now in full swing (rhyme not intended), our herbs are coming back up in our garden. In the spirit of the season, I think it is a great time to share one of our favorite herb seasonings: Scarborough 6 Spice.

This seasoning was named for the song, Scarborough Fair, and the four herbs repeated throughout the chorus: parsley, sage, rosemary, and thyme. My husband came up with the blend when he decided to mix those spices but thought it needed something more. What came of it was this blend that we now use in many recipes.

This is truly an all-purpose herb seasoning blend that goes great on many different types of dishes from soups to roast chicken.

What to Use This Herb Seasoning With

  • Roast
  • Lamb
  • Steak Fingers
  • Chicken
  • Pork
  • Garlic Bread
  • Pastas with a tomato-based sauce
  • Roasted Potatoes
  • Soups and Stews
  • Turkey
  • Roasted Vegetables
  • Sausage
  • And more

Tips

  • Pair this herb seasoning with lemon to add a tangy, citrusy note.
  • You will usually want this blend to be cooked with the food for at least a little while to bring out more of the flavor in the fennel. However, you can just sprinkle this over cooked food if you want to add it in last minute.
  • I like my herb blends to be a little coarse, but if you want it more fine, give it a few whirls in a spice grinder (electric coffee grinders also work great).
  • I keep this blend in a a spice bottle in our spice cabinet and label it as Scarborough 6 Spice. It is wonderful to keep on hand as it pairs well with so many dishes.

Ingredients

Parsley

Sage – rubbed is great if you have it.

Rosemary

Thyme

Oregano

Fennel Seeds – We used whole fennel seeds.

Tools You May Need

Spice Jar (optional) Keep emptied spice jars for blends such as this. That way you don’t have to make it every time you cook with it.

Small Bowl

Spice Grinder: (optional) This is only if you want your blend to be less coarse. An electric coffee grinder will also work well. We like this recipe a little course, but everyone has different tastes, so use one of these if you need.

How to Make Scarborough 6 Spice Herb Seasoning

This is definitely the simplest recipe we have posted. It is equal parts everything. That’s it.

Take your herbs and fennel seeds and measure equal parts into a small bowl. Mix it.

If you want it to be more fine or are adverse to whole fennel seeds, you can use a grinder for just a few seconds on either the mixture as a whole, or just the fennel. After the seasoning is mixed, I place it in a spice jar and label it “Scarborough 6 Spice.”

To use this blend, Simply sprinkle it into or on top of your dish at least 10 minutes before it is finished cooking. The heat will help the herbs to release more flavor. We usually massage it into our meats with some oil or sprinkle it on our potatoes or vegetables before the dish even goes into the oven. However, if you want to simply sprinkle it on at the end, you can.

Scarborough 6 Spice Herb Blend

Ingredients

  • 1 Tbsp Parsley
  • 1 Tbsp Sage
  • 1 Tbsp Rosemary
  • 1 Tbsp Thyme
  • 1 Tbsp Oregano
  • 1 Tbsp Fennel Seeds

Instructions

  • Mix all ingredients in a small bowl.
  • Use on meats, stews, soups, and more.
